For too many years, people putting out gluten free products or cookbooks have been taking out the gluten but adding in a whole host of ingredients that we'd be better off without. Among those ingredients are simple carbs, starches, saturated fats, refined sugars, corn, soy, yeast, and dairy.
I've heard so many people tell me that they started gaining weight and/or spiking their blood sugar or having issues with inflammation while on a gluten-free diet. This should not be okay!
